Pork Shoulder is injected with our marinade made from different juices and hot sauces a minimum of 12 hours prior to smoking. It is also rubbed with our original pork rub then smoked for a minimum of 8 hours with Hickory and Apple wood.

Prepared and rubbed with our original beef rub seasoning a minimum of 8 hours prior to smoking. Every brisket is smoked for a minimum of 8 hours with Oak, Mesquite and Apple wood. Served in a sauce made from the drippings of the brisket.

6 Cheese and Mac

Texas Bean Chili

Made in base chili sauce with our beef rub added for flavor. Instead of chili powders, we add pieces of smoked brisket trimmings, red peppers, sweet onion bacon beans and whole jalapenos. Simmered for hours to perfection.

Corn on the cob, shucked, split in two. Served with butter, salt and pepper.

Fresh Vegetable Medley

Steamed vegetables including zucchini, yellow squash, broccoli, carrots and sweet onion. Steamed with seasoning and butter.

Award Winning Chili

Our Chili starts out with real beef, not hamburger. We blend 4 different chili powders and 4 other seasonings and simmer in a tomato sauce base combined with fresh jalapenos and other chili peppers. This combination has won over 12 awards and People's Choice winner several times. You can have it one of two ways- True Texas style with just sauce and meat or Homestyle with beans, yellow and red peppers.

Fried Green Beans

Fresh green beans browned in bacon grease with mushrooms, red peppers and sweet onion. Mixed with our pork rub and brown sugar. We can make this vegetarian.

Fried Corn

Corn with jalapenos, green onions and bacon. Quick fried in bacon grease with our original pork rub and brown sugar, fried until caramelized onto the corn.

Spinach Salad

Fresh spinach with balsamic vinaigrette dressing, feta cheese, sliced cherry tomatoes and candied pecans.



Carolina Red

Ketchup based sauce with vinegar, seasoning, sugar and cayenne pepper for heat. Great on pork options.
